Wash and dry the potatoes. Cut them into 1-inch pieces. For smaller potatoes, simply halve or quarter them.
In a large bowl, combine the olive oil, grated Parmesan cheese, garlic powder, onion powder, Italian herbs, black pepper, and salt.
Add the cut potatoes to the bowl and toss them until they are evenly coated with the Parmesan mixture.
Spread the coated potatoes in a single layer on a large baking sheet. Make sure not to overcrowd the pan; use two sheets if necessary for maximum crispiness.
Bake for 30-40 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
Remove from the oven and garnish with fresh chopped parsley, if using.
