Coconut Sticky Rice
  1. Rinse & cook 1 ½ cup glutinous rice with 2 cups water in a rice cooker.

  2. Heat 1 can coconut milk with ½ cup sugar until sugar dissolves.

  3. Once the rice is cooked, mix in 1 cup of sweetened coconut milk.

  4. To the remaining sweetened coconut milk, combine with cornstarch slurry (1 Tbsp cornstarch + 2 Tbsp water) over medium heat until thickened. (Optional: add a pinch of salt to enhance the coconut flavour, or food colouring to create interesting colour combinations)

  5. Serve with toasted sesame seeds, sliced mango & mint and enjoy!
