Clean,boil, and drain potatoes
Press into parchment line, oiled spring pan. Build one in wall along sides.
Bake 15 minutes @350 degrees
Filling
Sauté onion and garlic instead olive oil
Add squeezed thawed spinach or fresh arugula to onions, cook
Mix 6 eggs in bowl add onion mixture
Pour into prebaked potato crust (brush with olive oil first)
Bake @350 for 30-35 minutes.
