    Potato crust

  1. Clean,boil, and drain potatoes

  2. Press into parchment line, oiled spring pan. Build one in wall along sides.

    Bake 15 minutes @350 degrees

    Filling

  3. Sauté onion and garlic instead olive oil

  4. Add squeezed thawed spinach or fresh arugula to onions, cook

  5. Mix 6 eggs in bowl add onion mixture

  6. Pour into prebaked potato crust (brush with olive oil first)

  7. Bake @350 for 30-35 minutes.
