Creamy Red Lentil Soup (easy One-pot, High-protein)

  1. Pulse onion, carrot, celery, and garlic in a food processor until finely chopped. Heat olive oil in a large pot, add the veggies, and cook 4 minutes. Stir in cumin and tomato paste, and cook 1 more minute until fragrant.

  2. Add the diced potatoes, vegetable broth, and rinsed red lentils. Season with salt and black pepper. Simmer gently for 15 to 20 minutes, stirring occasionally, until the lentils are soft and creamy and the potatoes are fork-tender.

  3. Blend the soup with an immersion blender until smooth, or cool slightly and blend in batches in a standing blender.

  4. Adjust seasoning, thin with extra broth if needed, and serve hot with a squeeze of lemon juice, a sprinkle of parsley, and optional chili oil.
