Sort through beans for any debris or bad beans
Soak beans in a large container filled with brine solution (2 tsp baking soda, 2 tbsp salt, and 4 qts water) for 3 to 4 hours
Drain water from beans and rinse with clean water
Add beans to crockpot
Saute onion and bell peppers in 1 tbsp oil until translucent, then add to beans along with garlic
Chop ham off bone if using bone-in and add meat and bone to beans
Top with cajun seasoning pack and add butter, black pepper, thyme, red pepper flakes, broth, bay leaves, and lemon juice
Start crockpot on low with 6 hour cook time, adding water throughout if beans seem too dry
About 15 minutes before finished, add kale, cover and let cook until preferred tenderness
