Asha's Chai-spiced Overnight Oats
  1. Place 1 cup milk of your choice and the Chai Spice Blend in a small saucepan over medium heat, cover, and bring to a gentle boil.

  2. Reduce the heat to medium-low and simmer for 5 minutes to bloom the spices.

  3. Transfer to a heat-proof container, add the yogurt, maple syrup, salt, vanilla extract, if using, and remaining 1 to 1¼ cups milk of your choice, and whisk to combine.

  4. Stir in the rolled oats and chia seeds, cover, and refrigerate for at least 12 hours (but, 18 to 24 is ideal to give the oats and chia seeds plenty of time to slowly absorb and hydrate).

  5. To enjoy cold, spoon the desired amount into a bowl and garnish with the toppings of your choice.

  6. To serve hot, spoon the desired amount into a saucepan and heat gently over medium heat until warmed through or place in a bowl and microwave in 1 minute increments until warmed through, then garnish with your desired toppings.

  7. Keep any leftovers in an airtight container in the refrigerator for up to 5 days.
