Get about 200g of peeled king prawns and finely mince
Add to the prawns: 1 tbsp toasted sesame oil, 1 tbsp light soy, pinch of sea salt and black pepper, pinch of MSG, 1 tbsp sugar, 1 minced clove garlic, 1 finely chopped spring onion, and 1 egg white
Mix to combine, then spread over thick white bread
Lay prawn side down into black and white sesame seeds
Press down gently so the sesame seeds adhere
Heat vegetable oil to 180°C
Gently place the bread sesame side down into the hot oil
Fry for about 4-5 minutes or until golden brown, flipping and basting along the way
Remove the toast and drain on a rack
Slice into quarters and serve with Thai sweet chilli sauce
