Crispy Parmesan Crusted Baby Potatoes
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a large mixing bowl, toss the halved baby potatoes with olive oil until they're evenly coated.

  3. In another bowl, combine the grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and black pepper.

  4. Add the Parmesan mixture to the bowl with the potatoes. Toss everything together until the potatoes are well coated with the cheese and seasoning.

  5. Arrange the potatoes in a single layer, cut side down, on the prepared baking sheet.

  6. Roast in the preheated oven for about 25-30 minutes, or until the potatoes are crispy and golden brown. You can test for doneness by piercing the potatoes with a fork.

  7. Once roasted, remove the potatoes from the oven and let them cool for a few minutes.

  8. Transfer the potatoes to a serving platter and garnish with freshly chopped parsley.
