Butter the outside of each bread slice and sprinkle with za’atar.
Layer both cheeses and the bacon on 2 bread slices, buttered side down. Sprinkle with a little more za’atar, then top with the remaining bread slices, buttered side up, to make 2 sandwiches.
Heat a large skillet over medium heat. Cook the sandwiches until golden and crisp, 3 to 5 minutes per side. Flip, sprinkle with more za’atar, and cook until the cheese is melted and gooey.
Drizzle with honey, if desired, and serve warm.
