15-minute Creamy Coconut Chicken Noodle Soup Recipe
  1. Reserve 2 tbsp coconut milk in a small bowl. Place noodles, pumpkin, capsicum, carrot, broccolini and ginger in a large deep frying pan. Top with peanut butter, spice mix, chicken and sesame oil. Pour over stock and remaining coconut milk.

  2. Cover and bring to the boil over high heat. Cook, covered, for 8 minutes or until vegetables are just tender. Stir to combine.
