Preheat oven to 160°C fan and line a loaf tin
Add hot water to the earl grey tea and set aside
Whisk the mashed banana, oil, yoghurt, sugars, and vanilla together
Whisk in the earl grey mixture
Sieve in the dry ingredients (flour, baking powder, baking soda) and fold with spatula until just combined, being careful not to overmix
Transfer to the tin and bake 55-57 minutes until a toothpick inserted comes out clean
Make the glaze by adding 1 tsp earl grey milk with icing sugar until thickened to desired consistency
For the matcha butter, melt the vegan butter then sift in the matcha powder and refrigerate to set
Once cooled, slice and enjoy warm with matcha butter and flaky salt
