Dry Chickpea Hummus
  1. Soak the dried chickpeas overnight to hydrate them.

  2. Boil the chickpeas for about 1 hour until tender.

  3. Add a teaspoon of baking soda to help with the cooking process.

  4. Skim off the foam that develops on the top.

  5. Continue boiling to remove as much of the skin as possible for a creamy hummus.

  6. Add the cooked chickpeas, tahini, fresh lemon juice, cold water, and garlic to a food processor.

  7. Blend until smooth and creamy, tasting and adjusting the seasoning as needed.
