In a bowl, mix peanut butter, protein powder and honey until smooth.
Fold in the dark chocolate chips.
Divide the mixture evenly between 6 muffin liners in a muffin pan and gently press down.
In a separate bowl, melt chocolate chips with coconut oil in the microwave, stirring every 15 seconds until smooth.
Pour melted chocolate over each cup to cover the tops.
Freeze for about 30 minutes until set, then store in the fridge.
