Beef And Onion Stir Fry
  1. Cut green onions in the middle to separate white and green parts. Cut white part in half into 2 inch sections. Cut green part into 2 inch sections and keep separate.

  2. Crush 4 cloves of garlic with a knife and finely mince them.

  3. Cut onion into large strips, separating the layers.

  4. Slice beef against the grain into average thickness slices.

  5. Marinate beef with soy sauce, dark soy sauce, oyster sauce, sugar, baking soda, and corn starch. Mix well, then add oil and sesame oil.

  6. Preheat pan over medium-high heat and add oil.

  7. When oil is hot, add onion and white part of green onion. Stir fry until raw taste is gone. Season with sugar and salt. Remove from pan.

  8. Add more oil to hot pan and add beef. Spread out and let pan fry until bottom is slightly brown.

  9. Stir beef to flip over and add minced garlic. Stir fry until garlic is evenly mixed.

  10. Cook until beef is about 70% done, then add cooking wine to the edge of the pan.

  11. After wine cooks off, add dark soy sauce and oyster sauce. Mix well.

  12. Add water and let sauce thicken.

  13. Add crushed black pepper and return all onions to the pan.

  14. Stir everything together and serve.
