Add flour, water + starter to mixer. Mix low 3 minutes to combine ingredients. Rest 30 minutes..
Add salt + sugar, to middle of mixer and mix. Then slowly add in oil, mix med-high 3–4 minutes until dough pumpkins up. You may hear sounds like bubble wrap popping.
Do about 2 folds an hour apart. Let rise until double.
Preshape about 20 minutes to relax dough. Then shape. (Fridge at this time if needed)
Proof until puffy, brush with butter, bake 360° for 35 min.
