Cook lentils first to speed up the cooking process.
To a pan on medium high heat, add a little olive oil.
Add your onion, tomato, garlic, red curry paste, and ginger.
Cook for 3 to 5 minutes to let flavors bloom together.
Add in your cooked lentils, coconut milk, spices, and serrano pepper (slice down the middle to let the heat melt into the lentil dish).
Let this simmer for 5 mins.
Lastly add in your cilantro.
Once served you can top with a squeeze of lime juice for extra flavor
