Chocolate Espresso Loaf With Ganache
  1. Preheat oven to 180°c.

  2. Line a 23x13 cm loaf pan.

  3. In a small bowl, add the instant coffee powder and water. Mix and set it aside.

  4. In a bowl, add in the flour, cocoa powder, baking soda, and pinch of salt. Give it a whisk.

  5. In another bowl, add in the sugars, eggs, avocado oil, yogurt, and milk. Mix well and then add in the coffee mixture.

  6. Add the dry ingredients into the wet ingredients and mix until you see no flour clumps! Do not over mix.

  7. Add in 90g of semi-sweet chocolate chips.

  8. Pour batter into loaf pan and bake for 45 minutes!

  9. While the loaf cools, make the chocolate ganache.

  10. Heat up the heavy cream until warm. Add in the chocolate chips and let it sit for 5 minutes.

  11. Then mix the chocolate until glaze or ganache forms.
