If the pizza dough is refrigerated, take it out of the fridge 20 minutes before you begin to allow it to come to room temperature.
Preheat the oven to 400°F (200°C). Spray an 8 x 8-inch baking dish with nonstick cooking spray.
Roll the pizza dough out on a lightly floured surface into a rectangle approximately 16″ x 8″.
Melt the butter in the microwave. Brush the surface of the dough lightly with about 1 tablespoon of melted butter. Set the remaining butter aside.
Layer the ham slices evenly over the pizza dough, followed by the cheese slices, ensuring they do not overlap.
Starting with the edge closest to you, roll the pizza dough into a log, encasing the ham and cheese inside. Use a serrated knife to slice the roll into 9 even pieces.
Place the pieces in the prepared baking dish and let them rise for 20 minutes.
Whisk the remaining melted butter with the mustard, honey, and poppy seeds. After the dough has risen, pour the honey mustard glaze over the top of the rolls.
Bake the rolls for 30 to 40 minutes, or until the dough is cooked through and golden on top.
Serve the rolls warm or at room temperature.
