Aubergine Kebab

    Marinade

  1. Peel and cut eggplants into thin slices

  2. Mix together tomato paste, soy sauce, vinegar or lemon juice, maple syrup or agave, olive oil, paprika, cumin, ground coriander, turmeric, cinnamon, salt and pepper to make the marinade

  3. Add eggplant slices to the marinade and massage until fully covered

  4. Place the eggplant slices on skewers by folding the slices multiple times

  5. Grill on each side on medium heat for 5 minutes until nicely colored and tender

  6. Brush with leftover marinade if desired
