Peel and crush the garlic then leave for 15 minutes before using.
Heat the ghee or olive oil over low-medium heat in a heavy-based pot.
Add the onion and a pinch of sea salt and cook for five minutes, until the onion softens.
Add the garlic and ginger and cook for a minute or so until fragrant.
Next add the spices and cook, stirring constantly, for about 30 seconds.
Add the almond or peanut butter and stir to incorporate.
Add the sweet potato to the pot and stir to coat it in the spiced onion mixture.
Add the coconut milk, broth and chickpeas.
Bring to a boil then reduce the heat to a simmer and cook, stirring every so often, until the sweet potato is tender (about 15 minutes).
Just before serving, add the spinach and the juice of half a lime.
Taste and add any additional salt or lime juice as required.
Serve over cooked rice, quinoa or noodles.
