Low-calorie Blueberry White Chocolate Scones
  1. Preheat your oven to 400 degrees.

  2. Combine flour, baking powder, salt, and butter into a large bowl, mix up with your hands, pushing the flour into the butter with your fingers.

  3. Add cottage cheese, eggs, honey and vanilla to a blender, blend until smooth.

  4. Add to the bowl with the dry ingredients, mix until it is about ½ mixed together, then sprinkle in your white chocolate chips and frozen berries.

  5. Continue to mix together until it just comes together, sprinkle flour on your counter and dump it all out.

  6. Start pushing it all together into a circle. DO NOT OVER MIX.

  7. It’s done when everything is staying together relatively well.

  8. Cut into 8 pieces, lay on a sheet tray with parchment paper.

  9. Brush milk onto the tops of them, bake for 15-18 minutes, or until lightly browned on the top.
