Heat oil in a pan, add chicken and cook until lightly golden
Add onions and cook until soft
Add carrots and cook a few minutes
Stir in garlic, then add rinsed rice
Pour in boiling water or broth and season with salt
Bring to a boil, then cover and cook on low for 15-18 minutes
Let it rest for 5 minutes
Fluff, top with parsley or dill and serve
