Heat a grill pan or turn on the grill, and once hot lightly brush bread slices with olive oil and place on the grill or grill pan. Grill for about 2 minutes, or until toasted, turn and grill on the other side.
Remove from grill/grill pan and rub with minced garlic, and sprinkle with a little salt on top.
In a medium bowl mix together all the Tomato Topping ingredients, serve over the freshly toasted bread, with a little drizzle of Balsamic vinegar and fresh basil leaves.
