Preheat oven to 350°F (175°C) and line a mini muffin tin, or heat air fryer to 320°F (160°C) and place silicone liners
Whisk cottage cheese and eggs until smooth
Add flour, honey/maple syrup, vanilla, and baking powder to the mixture and mix well
Gently fold in diced strawberries, saving a few pieces to press on top if desired
For oven: Bake 16–20 minutes until golden and set. For air fryer: Cook 10–13 minutes until firm and lightly browned
Let cool for 2–5 minutes, then remove from tin
Enjoy warm or chilled, optionally served with yogurt, honey drizzle, or nut butter
