Lebanese-inspired Vegan Lentil And Rice With Ginger
  1. Soak brown lentils for at least 4-6 hours or overnight until very tender

  2. Thoroughly rinse rice until water runs clear and soak for 20 minutes

  3. Heat oil in a wide pot, add onions and ½ teaspoon salt

  4. Fry onions on medium-high heat until they start to caramelize

  5. Reduce heat to medium or medium-low and add ginger and garlic

  6. Fry until onions are nicely browned, being careful not to burn them

  7. Add strained tomatoes and spices, mix well

  8. Add soaked lentils, rice, salt, and water

  9. Cover and bring to a vigorous boil

  10. Reduce heat to low and cook covered for 25-30 minutes

  11. Uncover and check if rice and lentils are cooked

  12. Continue cooking uncovered for 1-2 minutes on low heat to remove excess moisture

  13. Turn off heat and add parsley, lemon juice, black pepper, and olive oil

  14. Mix gently and cover for 5 minutes before serving

  15. Serve warm
