Mix all ingredients together until just combined (don’t overmix).
Using a scoop (I used a 2-inch), heap portions onto a lined baking tray. Leave space between each — they’ll rise and spread.
Bake at 180°C for 20–25 minutes until golden.
Brush with butter while hot and finish with chopped chives.
Serve warm with butter… and honestly, more cheese if you’re feeling bold.
