Lentil burgers
  1. If starting with dried lentils cover them with hot water and boil with the bay leaf until they are tender, about 20 minutes. Remove from the heat, discard the bay leaf, and drain well. Add the cooked, or well drained canned, lentils to a large bowl.

  2. Finely chop the onions and garlic and saute in the oil until the onion is soft and clear. Add the herbs, and the salt and pepper. Add the cooked onion mixture to the lentils and mix in the remaining ingredients.

  3. Divide the mixture into 8-10 small or 4-5 larger portions. Using wet hands to prevent the mixture sticking, shape the portions into patties. If the mixture won't hold its shape, add a few more breadcrumbs or a little more flour.

  4. Preheat a non-stick frypan or barbecue hotplate (use a non-stick liner if you have one) to a medium heat and oil it lightly. Place the patties in the pan or on the hotplate and cook over a medium heat until lightly browned on each side and firm when pressed in the middle.
