Preheat your oven to 190 degrees celsius.
Add 1 tsp of olive oil to each of the pockets in your muffin pan.
Crack an egg into each and add your seasonings and herbs.
Add in your tomato and kale.
Top with cheese.
Mix everything together.
Bake in the oven for 15-20 minutes or until cooked.
Let cool and store these in an air tight container in the fridge for 3-4 days!
Enjoy as is or top with your favourite sauce.
