Combine lean ground beef with diced onion, minced garlic, fresh coriander, green chillies, smoked paprika, black pepper, cayenne, and salt
Mix all ingredients together with your hands until well combined
Take a slice of pitta bread and add ⅕ of the meat filling to the center
Spray a pan with cooking spray and heat to medium-high
Place the arayes in the pan and cook for 2-3 minutes on each side until the outside is crispy and the meat is cooked through
Use a griddle pan for grill marks if desired
Slice and serve immediately while hot
