Heat oil in a large pan over medium heat. Add onions and cook until caramelized, about 10 minutes.
Stir in garlic, turmeric, cumin, paprika, salt, and black pepper. Cook for another minute.
Add potatoes, stirring well to coat them with the spice mixture.
Pour in diced tomatoes and water (or broth), stirring to combine.
Cover and let simmer for 15-20 minutes, stirring occasionally.
Taste and adjust seasoning. If using dried lime powder, stir it in at this stage.
Garnish with fresh cilantro or parsley and serve with warm bread or rice.
