  1. Pour 2 tablespoons cold water into a small bowl and sprinkle the gelatin evenly over the top. Let it sit for 5 minutes without stirring.

  2. Heat ½ cup water until hot but not boiling, about 160–180°F.

  3. Pour the hot water over the bloomed gelatin and whisk for 20–30 seconds until fully dissolved and smooth.

  4. Stir in the unsweetened cranberry juice and apple cider vinegar until fully combined.

  5. Mix in the lemon juice if using for a brighter flavor.

  6. Pour into a mug and drink warm 15–30 minutes before a meal.

  7. Or pour the mixture into silicone molds or a small container and refrigerate for 2–3 hours until firm.

  8. Remove from molds or cut into cubes, then store chilled until ready to eat.
