  3. Deglaze the pan with the white wine, scraping up any brown bits on the bottom.

  4. Add the pastina and toast for a couple minutes.

  5. Pour in the broth, season with salt and butter, and bring to a gentle boil.

  6. Simmer for about 10 minutes, stirring occasionally, until the pastina is tender.

  7. Finish with another knob of butter and a mixture of freshly grated Parmesan and Gruyère.

  8. Season with salt and black pepper to taste.
