Cook pasta according to directions, keep al dente as it will be cooked again
Heat pan to medium-high: brown sausage to a deep brown, add oil if sausage fat content is too low
Saute onion until soft, then add zucchini. Add spices. Cook until nicely browned
Reduce to medium: stir in 1 cup broth and 1 cup milk. Simmer for 3-5 minutes
Reduce to low heat: stir in Greek yogurt
Taste and adjust: if using a spicy sausage and mixture is too hot, add bit more yogurt
Mix cooked pasta, sausage mixture, and half the cheese together. Pour into a greased casserole dish. At this point, casserole can be baked immediately or put in the fridge to sit until ready to bake.
Bake at 375F uncovered 10-15 minutes. Top with remaining cheese and return to oven until cheese is melted.
Garnish with cilantro, parsley and/or lime
