  1. Marinate chicken thighs in 1.5 Tbs soy sauce

  2. Heat 4 Tbs oil in a wok or large pan over high heat

  3. Cook marinated chicken thighs until cooked through

  4. Push chicken to the side and scramble the 2 eggs in the pan

  5. Add minced garlic and stir-fry until fragrant

  6. Add fresh rice noodles to the pan

  7. Add Chinese broccoli stems and stir-fry

  8. In a small bowl, combine oyster sauce, soy sauce, fish sauce, golden mountain sauce, and sugar

  9. Pour sauce over noodles and vegetables, toss to combine

  10. Add Chinese broccoli leaves and stir-fry until wilted

  11. Season with white pepper to taste

  12. Top with chili vinegar sauce and serve
