Marinate chicken thighs in 1.5 Tbs soy sauce
Heat 4 Tbs oil in a wok or large pan over high heat
Cook marinated chicken thighs until cooked through
Push chicken to the side and scramble the 2 eggs in the pan
Add minced garlic and stir-fry until fragrant
Add fresh rice noodles to the pan
Add Chinese broccoli stems and stir-fry
In a small bowl, combine oyster sauce, soy sauce, fish sauce, golden mountain sauce, and sugar
Pour sauce over noodles and vegetables, toss to combine
Add Chinese broccoli leaves and stir-fry until wilted
Season with white pepper to taste
Top with chili vinegar sauce and serve
