THE COOKING MAWMA'S ONE PAN, 20 MINUTE GNOCCHI WITH ITALIAN SAUSAGE AND PESTO

INGREDIENTS:

• 2 tbsp olive oil

• 3 garlic cloves, minced

• 1 lb ground Italian sausage

• 2 cups mushrooms, sliced

• 3 oz pesto

• 1 cup chicken broth

• ½ cup spinach, chopped

• ¾ cup heavy cream

• 1 lb gnocchi

• 1 cup parmigiano cheese

• Optional: top with red pepper flakes

    INSTRUCTIONS:

  1. In a large pan, heat, add olive oil, garlic and ground Italian sausage. Cook until Italian sausage is mostly browned.

  2. Add mushrooms and cook for 2 minutes. Stir in pesto and mix. Then, add pesto, chicken broth and heavy cream. Bring to a simmer. Add gnocchi. Cover and cook for 3-4 minutes or until tender.

  3. Turn heat off and add spinach and parmigiano cheese. Stir until the spinach is wilted and cheese melts. Top with more cheese and, optionally, red pepper flakes. Enjoy!
