Drizzle cauliflower florets with a little oil and a pinch of salt, roast at 200°C/400°F for 20 minutes
Melt the butter in a pan and let it brown slightly, then add the spices along with the garlic
After 1 minute add the flour and beat it through to combine, cook over low heat for 5 minutes
Add the milk 100ml at a time, constantly beating and stirring to ensure a smooth finish
Add the cream and grated cheddar at the end, season to taste with salt and pepper
Mix the cauliflower and sauce together so each piece is well coated, add to an ovenproof tray or dish
Top with cheddar cheese and bake at 200°C/400°F for around 25 minutes
