Loaded Black Bean Burgers
  1. Place half the beans in a food processor, along with the garlic, cumin, egg, lime zest and juice from half the lime, and half the chopped scallions. Add a pinch of salt and pulse until it forms a chunky paste. Transfer the mix to a bowl and add in the toasted oats, chopped cilantro, remaining scallions and whole beans. Stir to mix. Using wet hands, form four smaller beans patties, or two larger ones. Place these on a small baking sheet and stick in the fridge for ten minutes.

  2. Heat a couple Tbs. of oil in a pan and sear the patties on one side for four minutes on a medium-high heat. Gently turn them over and sear the other side another 4 minutes. Add a cheese slice if you want, so that it will melt all over the patty. Such goodness.

  3. Then you build! I put mayo and hot sauce on my bottom toasted bun, but you add whatever you want. Bean patty, a spoonful of chunky salsa, sliced avocado, any lettuces you want, thinly slice red onion. Go bonkers.

  4. Makes two larger burgers, or four thinner ones. (Double this recipe to make four thick burgers!)
