Fry all the meat in a frying pan, adding the black pepper, smoked paprika and any other spices you want that need frying.
Add the mushroom with a little bit of water to deglaze and create a broth.
When reduced, add a bit of olive oil to fry the mushrooms.
When the mushrooms have some colour, add the leek.
When the leek has reduced, add the garlic.
When the garlic has fried for a short bit, deglaze with apple cider vinegar (white wine could be used instead).
After the vinegar reduced, add in the heavy cream. Add the bay leaves and all the other herbs. Add the sambal oelek as well. Add in the soy sauce and any other umami enhancer you feel like (MSG, black garlic, ...).
Simmer on low heat for a while. At the end, add in the lime, and simmer a bit more to reduce.
Server with side of your choice (pasta or rice would work well).
