Raspberry Lemon Loaf Cake
  1. Preheat oven to 180°C (350°F). Grease and line a loaf pan.

  2. In a bowl, whisk together flour, baking powder, baking soda and salt.

  3. In another bowl, whisk sugar, eggs, melted butter, milk, lemon juice, lemon zest and vanilla.

  4. Add dry ingredients into wet and mix gently until just combined.

  5. Fold in raspberries carefully to avoid crushing them.

  6. Pour batter into the loaf pan and smooth the top.

  7. Bake for 45-55 minutes or until a toothpick comes out clean.

  8. Let cake cool completely.

  9. Mix glaze ingredients until smooth and pour over the loaf.

  10. Let set before slicing.
