Beetroot & Feta Pesto
  1. Add the beetroot, toasted walnuts and feta to a blender. Peel the garlic clove and add it in then squeeze in the juice of the lemon and season generously with salt and pepper.

  2. Add ⅓ of the olive oil and begin to blend, then continue to add olive oil until you get to a thick pesto consistency.
