Stir-fry Beef with Bitter Melon and Zha Cai

  1. Marinate the julienned beef with salt, soy sauce, dark soy sauce, ground white pepper, baking soda, and Chinese cooking wine. Coat with 1 tbsp cooking oil. Set aside for 15 min.

  2. Cut the bitter melon in thicker strips. Blanch in 1 tbsp cooking oil for 20 sec, set aside to allow moisture to evaporate.

  3. Heat 2 tbsp cooking oil in a wok or large pan over high heat.

  4. Add the marinated beef and stir-fry for 1-2 min until the meat has changed color.

  5. Add the garlic and stir-fry until fragrant.

  6. Add the blanched bitter melon, julienned red chili pepper, and julienned zha cai. Stir for around 3 min at high heat.

  7. Check on saltiness, depends a bit on saltiness of the Zha Cai.

  8. Garnish with scallion stalks and serve hot.
