In a large mixing bowl, whisk together ½ cup of warm water, 1 tsp of yeast, and 1 tsp of sugar.
Then, mix in 1 & ¾ cup of flour and ½ tsp of salt until a dough forms. Knead until smooth.
Cover the mixing bowl with a towel and let rise for 1 hour, or until doubled in size.
Once the dough has risen, divide the dough into 6 pieces. Roll them into about 10 inch logs and flatten. Then, place the end of a hot dog at the end of the log and roll it up.
Once you've repeated this process with the rest of the dough & hot dogs, dip them in a baking soda water bath (1 cup of warm water whisked together with 1 tbsp of baking soda) Then, transfer them to a parchment paper lined baking sheet.
Bake on 425 for 10-12 minutes, or until golden brown.
Brush with melted butter and sprinkle with flaky salt.
Melt 1 tbsp of butter in a sauce pan on low heat. Whisk in 1 tbsp of flour until a paste forms.
Whisk in 1 cup of milk and cook for about 1-2 minutes, or until it starts to thicken.
Turn off the heat, and whisk in 1 cup of shredded cheddar cheese, 3 slices of american cheese, and ¼ tsp of salt.
