Boil salted water and cook 1 lb of pasta (Penne or your choice) until done
In a skillet, add olive oil and 1 tbsp of butter
Sear seasoned chicken breasts for 5 minutes on each side or until cooked
Set cooked chicken aside and cover with foil
Chop 1 onion and slice 1 package of mushrooms
In the same skillet, add 2 tbsps of butter and sauté onions until caramelized
Add mushrooms to the onions
Add 1.5 tbsps of garlic and sauté for 5-7 minutes until mushrooms are softened
Add 1 cup of madeira or marsala cooking wine and simmer for 2-3 minutes
Add 1 cup of heavy cream, 1 cup of chicken broth, ½ cup of sour cream, and ½ cup of parmesan cheese
Once sauce is thickened slightly, add cooked pasta and chicken to the skillet
Serve with additional parmesan cheese and fresh parsley
