Instant Pot French dip sandwiches

  1. Sear the beef Set Instant Pot to Sauté, add olive oil, and sear roast pieces 2–3 min per side until browned. Remove and set aside.

  2. Sauté aromatics Add onions and cook until softened (about 3–4 min). Stir in garlic for 30 sec.

  3. Deglaze Pour in ½ cup beef broth and scrape up brown bits. Simmer for 1–2 min.

  4. Pressure cook Return beef to the pot. Add broth, Worcestershire, herbs, salt, and pepper. Pressure cook on high 60 mins with natural pressure release (around 20 mins).

  5. Shred the beef, remove bay leaf.

  6. Assemble sandwiches by toasting bread, adding provolone cheese, toaster oven to melt.
