Give a quick boil in hot water seasoned with a pinch of salt for 4 - 5 minutes.
Thinly slice your onions.
In a baking pan or skillet pan heat up the olive oil and once it's sizzling add your sliced onions, salt, pepper, chicken spice and thyme.
Drain your potatoes and once your onions have softened and become golden, add your potatoes into the pan and toss everything together, making sure it's all mixed together.
Pour over your fresh cream and grated cheese.
Pop your pan into a hot oven 200 Degrees C and grill for 5 - 10 minutes, turn the heat down to 180 Degrees C.
Keep in the oven till the cheese has all melted and it's bubbling away. If the fresh cream is too much, keep in the oven for longer, so it's not so saucy and it's a bit thicker.
