Make the chow mein sauce by mixing together oyster sauce, light soy sauce, dark soy sauce and sesame oil in a small bowl.
Heat a wok or frying pan on a medium to high heat and add a tablespoon of oil. Fry the char siu pork for 2 to 3 minutes.
Add the diced garlic and white part of the spring onion and stir fry for 30 seconds or until the spring onions start to soften.
Add fresh egg noodles into the wok and stir fry until the egg noodles have heated up, this should take 2 to 3 minutes on average. Sprinkle the remaining spring onions and stir.
Pour the sauce over the egg noodles and stir until it thickens and coats the noodles.
