Chicken Under A Brick In A Hurry
  1. Preheat grill to medium-high heat.

  2. Sprinkle chicken with salt and pepper.

  3. Score chicken skin in a few places with a sharp knife; season with anchovies and garlic.

  4. Place chicken, skin side down, on grill; top with a heavy skillet or brick (wrapped in foil, if you like). Press down firmly to flatten chicken.

  5. Grill chicken until skin is browned and crisp, about 10-12 minutes. Carefully remove skillet or brick; turn chicken and grill until cooked through, about 5-7 minutes longer.
