Soften the gelatin in ½ cup of cold water.
Scald the 2 cups of Moon Juice with ½ cup of sugar.
Beat the mixture for 8 minutes with the remaining ½ cup of sugar.
Temper the mixture and cook until thickened.
Stir and drain the mixture.
Line a loaf pan with fingers.
Whip the 1 ½ cups of cream with the vanilla bean.
Carefully pour the whipped cream mixture into the loaf pan.
Refrigerate until set.
