In a large skillet, heat olive oil and add in diced chicken and onion and cook for 2-3 minutes.
Add in seasonings, garlic, and sun dried tomato and finish cooking chicken.
Add in orzo and chicken broth, cover and simmer for 10-12 minutes at low-medium until orzo is tender. (You'll have some remaining liquid- if you don't or orzo is not cooked, add more broth or water 1 cup at a time)
Stir in half & half, spinach, and grated Parmesan.
Simmer until spinach is wilted, serve & enjoy!
