Slice and cut your zucchini into zucchini rings then season them with a generous drizzle of olive oil, cornstarch, breadcrumbs, grated cheese, salt and paprika.
Bake in the oven for 15-20 mins or until crunchy (180C/360F).
In the meantime, cook the zucchini leftovers with a drizzle of olive oil and salt then mix them with yoghurt, a drizzle of lemon juice, salt and paprika… enjoy.
